Sourdough Focaccia with macadamia oil

- 60g active starter
- 10g salt
- 430g room temp water
- 510g bread flour
- 3 tablespoons macadamia oil, plus extra for drizzling
- Flaky sea salt (for garnish)
method
- Combine starter, salt, and water in a bowl; add flour and mix.
- If time allows, perform two folds: after 30 minutes and again after another 30 minutes.
- Coat with macadamia oil, cover, and let rise for 2 hours.
- Refrigerate overnight for about 12 hours.
- Remove dough from fridge 2-3 hours before baking.
- Add 2 tablespoons of macadamia oil to a 9x13-inch pan, drizzle 1 tablespoon over the dough, and fold into a rectangle with the seam down.
- Let rise for 2-4 hours until puffy.
- Preheat oven to 220ºC, dimple and stretch dough in the pan, and sprinkle with flaky sea salt.
- Bake for about 30 minutes until golden, then cool for 20 minutes before slicing.

- 4 ripe bananas, mashed
- 3 eggs
- 1 cup brown sugar
- 1 1/2 cups self raising flour
- 1 tsp baking soda

- 1 tbsp cinnamon
- 1 tsp vanilla
- 1/2 cup chopped macadamia nuts
method
- Preheat oven to 165°C (330°F). Mix bananas, eggs, macadamia oil, vanilla, and sugar.
- Add flour, baking soda, cinnamon, and salt, stirring until combined. Fold in macadamia nuts (optional).
- Pour into a greased loaf pan and bake for 60-70 minutes, resting for 5 minutes before serving.

- ¾ cup Fancy Farmer Macadamia Oil
- 2 eggs
- 2 tsp vanilla extract
- 1 ¼ cup brown sugar
- 1 ½ cups almond flour
- 2 tbsp plain flour
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup white chocolate chips
- ½ cup of chopped roasted macadamia nuts
method
- Preheat your oven to 180°C and line a 20×20 cm square pan.
- In a medium bowl, whisk the eggs, then the Macadamia Oil and vanilla extract until smooth. and dissolve the brown sugar.
- In a separate bowl, combine the dry ingredients.
- Gradually fold the dry ingredients into the wet mixture, and fold through the white chocolate chips and chopped roasted macadamia nuts.
- Transfer the batter to the prepared pan, smoothing the top with a spatula for an even bake.
- Place in the oven and bake for 40–45 minutes, or until the surface is golden brown and a skewer inserted into the centre comes out clean or with a few moist crumbs.
- Leave to cool completely in the tin before slicing into bars or squares.

- 125g salted butter, melted and slightly cooled
- 1/2 cup Fancy Farmer Macadamia Oil
- 1/2 cup castor sugar
- ½ cup brown sugar
- Zest of 1 lemon
- 1 tablespoon vanilla bean paste or vanilla extract
- 3 eggs
- 2 cups plain flour
- 1/2 cup almond meal
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1 cup thick natural Greek yoghurt
- 1/2 cup full cream milk
Streusel:
- ½ cup Fancy Farmer Macadamia Oil
- 1/4 cup castor sugar
- 1/4 cup brown sugar
- 1/2 cup plain flour
- 1/3 cup almond meal
- 1 cup chopped macadamia nuts
- 1
teaspoon vanilla extract
method
- Preheat your oven to 180°C and line a 23cm round springform pan with baking paper. Set aside.
- To make the streusel topping, mix together the Fancy Farmer Macadamia Oil, castor sugar, brown sugar, plain flour, almond meal, chopped macadamia nuts, and vanilla extract in a medium bowl. Stir until the mixture resembles damp, crumbly sand, then set aside.
- In a large mixing bowl, whisk the melted butter, Fancy Farmer Macadamia Oil, both sugars, lemon zest, and vanilla until well combined.
- Add the eggs one at a time, whisking after each addition until the mixture is smooth and slightly thickened.
- In a separate bowl, sift together the plain flour, almond meal, baking powder, baking soda, and sea salt. Gradually fold these dry ingredients into the wet mixture, being careful not to overmix.
- Pour in the Greek yoghurt and full cream milk, stirring gently until a smooth batter forms.
- Transfer the batter to the prepared pan, spreading it evenly with a spatula.
- Sprinkle the streusel topping generously over the surface of the cake batter, ensuring an even layer.
- Bake for 1 hour and 10 minutes, or until a skewer inserted in the centre comes out clean. The cake will develop a deep golden crust—this is intentional, so resist the urge to lower the oven temperature.
- Once baked, allow the cake to cool in the pan for at least an hour before carefully removing it.
- Serve warm, dusted with icing sugar and accompanied by a spoonful of thick cream.

method
- For these pancakes, start by mashing 1 ripe banana in a large mixing bowl until smooth. Add 1 egg, 1 tsp of macadamia oil, and ¾ cup milk, then whisk everything together until combined.
- In a separate bowl, combine 1 cup of flour, 1 tsp baking powder, ½ tsp cinnamon, and ¼ tsp salt. Stir the dry ingredients together.
- Now, pour the dry ingredients into the wet ingredients and stir gently until just combined. Be careful not to overmix, as the batter should be a little lumpy.
- Heat 2 tbsp of macadamia oil in a large skillet or griddle over medium heat. Once the oil is hot, pour about ¼ cup of batter onto the skillet for each pancake. Cook for 2-3 minutes on each side, or until golden brown. You'll know it's time to flip when small bubbles appear on the surface of the pancake.
- Stack the pancakes on a plate, drizzle with maple syrup, and enjoy!
- These pancakes make 2-3 servings and are deliciously soft, fluffy and slightly sweet from the banana!

- 2 cups rolled oats
- 1 cup coconut flakes
- 1 cup macadamias
- ½ cup mixed nuts (we used pecans, almonds and hazelnuts)
- ½ cup sultanas (or any dried fruit of your choice)
- 1 tsp cinnamon
- 1 pinch salt
- ⅓ cup maple syrup or honey
- ¼ cup Fancy Farmer macadamia oil
- 1 tsp vanilla extract (orange essence would also be nice here)
- 2 egg whites
method
- Preheat your oven to 180C and line a baking sheet with parchment paper. In a large bowl, combine the rolled oats, coconut flakes, chopped macadamias, mixed nuts and dried fruit. Add cinnamon and a pinch of salt, then stir everything together.
- In a separate bowl, whisk together the maple syrup (or honey), macadamia oil, and vanilla extract (or orange essence).
- Lightly whisk the egg whites in another small bowl until frothy, then mix them into the wet ingredients.
- Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
- Spread the mixture out in an even layer on the prepared baking sheet.
- Bake for around 20-25 minutes, do not stir or mix the mixture once baking - this is what will make it clumpy and extra crunchy. Keep an eye on it, as it can burn quickly toward the end.
- Once golden and crispy, remove the granola from the oven and allow it to cool completely on the baking sheet. As it cools, it will crisp up further.
- Store in an airtight container for up to 2 weeks.

ingredients
- ½ cup Fancy Farmer Macadamia Oil
- 2 cups plain flour
- 1 tsp baking powder
- 2 tsp bicarb soda
- 1 tsp salt
- 1 ¾ cups sugar (less to your taste)
- ½ cup cocoa powder
- 1 tsp vanilla
- 1 cup of coffee (2 shots of espresso plus water)
- 2 eggs
- 1 cup sour milk (3/4 milk, ¼ vinegar)
method
- Sift dry ingredients to aerate and remove lumps,
- Add the wet ingredients.
- Beat/ whisk for 2 minutes until mixture is smooth and runny (you can use a food processor).
- Bake in a square 20cm greased tin at 180 Degrees C for 1 ¼ hours.
- Leave it in the tin to cook for 15 mins before turning it out.
- Chill it in the fridge if you want to put icing on it.
TIPS:
- If using a convection microwave, cook on low/mix 160C for 50 mins.
- You can top it with store-bought frosting/icing mix if you like
- You can add rum, or orange liqueur or baileys to the coffee mix if you like!
