  • 60g active starter
  • 10g salt
  • 430g room temp water
  • 510g bread flour
  • 3 tablespoons macadamia oil, plus extra for drizzling
  • Flaky sea salt (for garnish)

method

  1. Combine starter, salt, and water in a bowl; add flour and mix.
  2. If time allows, perform two folds: after 30 minutes and again after another 30 minutes.
  3. Coat with macadamia oil, cover, and let rise for 2 hours.
  4. Refrigerate overnight for about 12 hours.
  5. Remove dough from fridge 2-3 hours before baking.
  6. Add 2 tablespoons of macadamia oil to a 9x13-inch pan, drizzle 1 tablespoon over the dough, and fold into a rectangle with the seam down.
  7. Let rise for 2-4 hours until puffy.
  8. Preheat oven to 220ºC, dimple and stretch dough in the pan, and sprinkle with flaky sea salt.
  9. Bake for about 30 minutes until golden, then cool for 20 minutes before slicing.

  • 3 eggs
